First, go to bed when you are tired. When you are tired and you want to stay up to do a few more things, you increase the temptation to snack to stay energetic and alert. Typically what happens is that because you are already tired you end up snacking more than you need to and still end up fulling asleep and not getting as much done. On the other hand, if you go to sleep when you are tired, you won't to snack as much , and you can still wake up very early and get much done.
The second way to avoid unhealthy snacking is to make your snacks healthy. Instead of eating bread , cookies and chocolate, get yourself some fruits, nuts and veggies. What type of nuts do I recommend? Almonds and peanuts. For fruits, go for berries, grapes and strawberries. For veggies go for celery and cucumbers.
The third way to avoid unhealthy night snacking is to do mild exercise after work, shower then go to bed. This will help you refresh your mind and have more relaxing night sleep without getting into unhealthy snacks.
